This New York Bakery-Style Chocolate Babka Reminds Me of My Childhood

Place 2 1/4 cups chocolate chips, 3/4 cup granulated sugar, 1/2 cup heavy cream, 1/4 cup plus 2 tablespoons Dutch-processed cocoa powder, 4 tablespoons unsalted butter or margarine, 1 tablespoon canola oil, and 1/2 teaspoon kosher salt in a small saucepan. Cook over low heat, stirring often, until the chocolate and butter are melted and the mixture is smooth. (Alternatively, place the ingredients in a medium microwave-safe bowl and microwave at 100% power in 1-minute increments, stirring between each, until smooth.) Let cool to room temperature.
