This cake was seriously delicious. It had a nice light texture but was still super moist. The vanilla flavor was bold without being overpowering, and the whole cake was sweet without being cloying. I also loved how easy the frosting was to make, and how smoothly it went onto the cake. It was easy to make beautiful swooshes and was perfectly fluffy.
My only critique is that whipping the egg whites in a separate bowl is a bit tedious. Some of the other recipes I tried don’t require this step and still came out light and fluffy, so I had to knock a point off. Other than that, this cake is practically perfect, and would be an excellent choice for a birthday cake.
