Easy Raspberry Streusel Bars

My favorite desserts to make are streusel bars. I perfected my recipe and made many versions over the years. When I don’t use fresh fruit, like in my Cherry Pie Crumb Bars, I use jam or preserves. These Raspberry Jam Streusel Bars are so quick and easy, even the kids can make them! It’s fail-proof and very fun to make. The crust and streusel topping are made from one dough. The filling can be made with any fruit jam or preserves. You can make a different version every day!

You can easily double the recipe for baking in a larger pan. You can skip the almonds and add lemon zest to the streusel. Have fun with the recipe and enjoy the bars! Serve them while they are still warm and the crust and topping will melt in your mouth.

Ingredients:

  • raspberry jam
  • flour
  • sugar
  • baking powder
  • baking soda
  • salt
  • butter
  • sliced almonds

How to make Raspberry Jam Streusel Bars?

  • Start by melting butter. Let it cool completely but not set.
  • Add sugar and mix in with a whisk.

  • Add dry ingredients and stir everything together with a fork until coarse crumbs form.

  • Reserve about 1 cup of the dough mixture.
  • Pour the remaining amount into the baking pan.

  • Press dough with a fork or bottom of a cup.
  • Spread raspberry jam over crust.

  • Sprinkle reserved dough over the jam. The more crumbs the better!
  • Sprinkle sliced almonds on top.
  • Bake the bars until golden on top.

How to serve raspberry jam streusel bars?

Since the bars are already sweet, I serve them plain. You can make a powdered sugar glaze or dust them. I highly recommend serving them while still warm. They are absolutely delicious! When cutting, keep in mind that the jam layer is sticky. For clean slices, wipe the knife in between cutting.

Can I use other fruit jams to make these streusel bars?

Absolutely! Any jam works: berry, grape, peach, apricot, orange, etc. Have fun with this recipe by making different versions. It’s so easy, it’s fail-proof!

Storing:

Keep any leftovers on a cake stand with a lid or a plate and cover with saran wrap. No need to refrigerate them.

Ingredients

  • ½ cup unsalted butter
  • ½ cup granulated sugar
  • 1 ½ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup raspberry jam
  • ¼ cup sliced almonds

Instructions

  1. Preheat oven to 375° F. Line 8″ square baking pan with parchment paper and set aside.

  2. In a microwave-safe bowl, melt butter. Set it on the counter and let it cool to room temperature. It cannot be hot but it should not set back either. Check on it every few minutes.

  3. Measure out remaining ingredients.

  4. Pour cooled butter into a mixing bowl and add sugar. Whisk for 1 minute. Let it sit for a minute, then mix again. Refer to my photos to see what it’s supposed to look like.

  5. Add salt, baking powder, soda, and flour. Stir with a fork. The mixture should be dry and resemble coarse crumbs.

  6. Reserve 1 cup of the crumbs mixture for the topping. Pour the rest into prepared pan.

  7. Press the dough into the bottom of the pan with a fork or bottom of a cup.

  8. Spread the jam over crust.

  9. Sprinkle the topping mixture over jam. Sprinkle sliced almonds on top.

  10. Bake the bars in preheated oven for 23 to 25 minutes. For me, the magic number was 24 minutes.

  11. Remove from oven and let cool in pan for 10 minutes. Remove bars with parchment paper onto a cutting board. Let them cool until warm but not hot.

  12. Cut into 9 squares and serve.

Recipe Notes

  • Remember to fluff the flour in its container, then spoon into a measuring cup. Level off the top with a knife.
  • If your jam is very thick, heat it up in the microwave for 15 seconds or so to “melt” it a little bit to make spreading easier.
  • When cutting, keep in mind that the jam layer is sticky. For clean slices, wipe the knife in between cutting.
