HOMEMADE KETE-BREAD (STUFFED BREAD WITH FRIED FLOUR AND WALNUT)

You can find these simple Kete-Bread at some bakeries in Central Anatolia and Eastern Anatolia region in Turkey. Kete-Bread is a kind of pastry and they are stuffed with the fried flour or crushed walnut. This homemade Kete is an authentic Turkish bread, I have stuffed it with fried flour and I added crushed walnut. It goes well with a cup of tea or coffee. Enjoy it!

INGREDIENTS:

DOUGH INGREDIENTS:

10g-15g. fresh yeast or 8g. dried yeast, 1/2 teaspoon sugar

1/2 cup melted butter and 1/2 cup olive oil

1 cup warm whole milk

1 egg and 1 egg yolk for egg wash

1 teaspoon sea salt

4-5 cup plain flour

FILLING INGREDIENTS:

175g butter

100 g. all purpose flour

1 cup crushed walnuts

Salt to taste

1/3 cup olive oil for brush the rolled dough

INSTRUCTIONS

1-Mix the yeast, sugar and 2 tablespoon warm water in a small bowl and set aside at room temperature.

2-Meanwhile in a large bowl, mix together the melted butter, olive oil, egg, milk, salt. Add yeast mixture and stir until well blended, gradually add the flour, stirring all the time, until a dough is formed. Knead it about 10-15 minutes until the dough is soft and pliable. Cover with a tea towel and put in a warm place until it has doubled in size.

3-Meanwhile prepare the filling by melting the butter in a medium saucepan, adding the flour and frying until the flour is lightly golden. Add the crushed walnut, add the salt to taste and cook for one minutes, stirring all the time. Set a side it to cool.

4- When the dough is ready, divide into 8-10 equal parts. Take one portion and roll into ball, then roll it out on a lightly floured work top until it is 1/4 cm thick and as round as possible. Brush the surface with the olive oil and then fold the rolled dough like an envelope and place 1 table spoon mixed-fried flour-walnut at the middle envelope. Fold the dough over the fried mixture to make a circle. Carefully roll it out to make it a little larger and shape it into a round about 1 cm thick. Or Press around the edge of each round with your finger to give a flat appearance and then make a pattern on the top with the prongs of a fork.

5-Place on a greased baking tray, Brush the tops with the beaten egg. Repeat with the remaining dough and filling. Bake in an oven preheat to 270C. about 15-20 minutes or until golden brown. Leave to cool or serve warm with tea or coffee.
